These Fortune Cookie Keto Waffles are light and fluffy on the inside and perfectly crispy on the outside. Best of all they can be ready in less than 30 minutes. They are a great recipe for meal prep - make 2 or 3 batches at a time, freeze them and then just pop them in the toaster when you are ready to eat.

I decided to call these keto waffles from my book 30 Minute Ketogenic Cooking Fortune Cookie Keto Waffles, because they have that subtly, sweet vanilla flavor of a fortune cookie. Unlike a lot of low carb waffle recipes, these are nut free. They are made using coconut flour, cream cheese, and eggs as the main ingredients, making them low carb, gluten free, and incredibly light and fluffy.

Ingredient Notes

  • Coconut flour: To make these keto waffles nut free, I used coconut flour, instead of almond flour. Coconut flour is very absorbent and cannot be substituted 1:1 with almond flour. (Try this Keto Blackberry Clafoutis)
  • Cream cheese: The cream cheese helps make these coconut flour waffles so light and fluffy. You could also use mascarpone cheese or ricotta. (Try these French Toast Egg Puffs)
  • Vanilla: Be sure to get the good stuff and go with a pure vanilla extract, as opposed to an imitation vanilla extract.
  • Sweetener: This is my low carb sweetener of choice, but you can use any low carb, keto-friendly sweetener you prefer.
  • Sugar-free maple syrup: These keto waffles wouldn't be complete without some low carb maple syrup on top. (This is the brand I use)

How to make the best Keto Waffles

STEP 1: Combine the cream cheese, eggs, erythritol, heavy cream, and vanilla extract in a blender. Pulse until the mixture is smooth and the ingredients are well combined.

STEP 2: Add the dry ingredients - coconut flour and baking powder and pulse to combine. It may be necessary to use a rubber spatula to scrape down the blender jar and mix in any coconut flour that sticks to the sides.

STEP 3: Lightly grease the waffle iron with butter. Ladle the batter into the center of the waffle maker; the amount will vary depending on the capacity of your waffle iron. Consult the manufacturer’s directions for the recommended amount of batter.

STEP 4: Cook for 5 minutes, or until the waffle iron stops steaming. Repeat this process with the remaining batter, regreasing the waffle iron between waffles.

Top with sugar free syrup, fresh keto whipped cream, or keto-friendly sugar free jam.

Recipe Tips and Variations

  • Storage: Store leftovers in the refrigerator for up to 5 days. Alternatively, you can freeze them for up to 6 months.
  • Reheating: I recommend reheating these leftover gluten-free waffles in a toaster or toaster oven.
  • Make Ahead: Make a double batch of these coconut flour waffles and freeze them for later. They make for awesome meal prep and quick and easy weekday breakfasts.   • Peanut butter: My favorite way to eat waffles is topped with some peanut butter or almond butter and sugar-free maple syrup.
  • Top with Jam: These are delicious topped with this Mixed Berry Chia Seed Jam
  • Add Blueberries: Add some blueberries to the batter to make low carb blueberry waffles. Top with syrup and fresh whipped cream. They are also delicious with strawberries.
  • Add Chocolate Chips: Drop some sugar-free chocolate chips into the batter and cook them into the waffles. Delicious!
  • Top with fresh whipped cream: To make a keto whipped cream, simply add 1 cup of heavy whipping cream and 2 tablespoon of sugar free vanilla syrup to a blender and blend until thick and creamy.
  • Make them dairy free: To make these keto waffles in a dairy free version, swap the heavy cream out for full-fat coconut milk or unsweetened almond milk, and the cream cheese for a nut based cream cheese alternative.

Frequently Asked Questions

Can you sub almond flour for the coconut flour?

I have only tested recipe as written so I cannot guarantee its success with almond flour. Coconut flour and almond flour are not a 1:1 substitution. Coconut flour is extremely absorbent, making is necessary to add more liquid and more egg when baking with it

Can you make this recipe as low carb pancakes?

Yes! Absolutely. This batter also makes for delicious pancakes.

Are keto waffles healthy?

These low carb and gluten free waffles are a much healthier alternative to a traditional store-bought waffle mix.

Can you make these waffles with aDash or some other mini-waffle maker?

Yes! Absolutely! It will just make double the amount of waffles and they will cook faster.

Description

These coconut flour waffles taste like breakfast and dessert all in one. When I made this keto waffle recipe for the first time, the flavor instantly reminded me of fortune cookies, hence the name. They have just enough sweetness to be delicious on their own but are equally delicious topped with a little bit of sugar-free maple syrup, jam or butter. Although these waffles don’t come with a fortune inside, they will definitely leave you feeling satisfied.
